Chateau du Coing de Saint Fiacre
On the small viticultural parish of Saint-Fiacre-sur-Maine, the 40 hectare estate is located at the confluence of the Sevre Nantaise and the Maine at the very heart of the Muscadet Sevre et Maine appellation.
On top of this metamorphic soil Veronique Gunther-Chereau produces these classic mineral driven elegant fine Muscadet wines.
Veronique is a member of the Chereau-Carre dynasty, but she split from the family business and took this prized 18th century chateau property with her.
Her fanaticism for quality combined with the natural mineral wealth of the land produces complex, interesting and beautifully clean wines.
Often mistaken by the name of the wine, to come from the muscadet grape, the grape is in fact -Melon de Bourgogne-coming from vines that are as old as 65 years with the overall average of the vines being 30 years.
Muscadet sur lie?
During the fermentation of white wines, the solid parts of the wine turn into "flakes" and slowly settle down to form a deposit.-The Lees. At the end of the fermentation, and throughout the winter, the wine remains in contact with the lees that rest at the bottom of the tank. This traditional technique produces aromatic wines with greater finesse and structure as the lees slowly "nourish" the wine giving it flavour and richness, and as "Oz" would say it-characters of the "Terroir"!
