Simonnet Febvre

Owned now by the famous Burgundy house of Louis Latour-(purchased in 2003)-this winery is still run independently, headed up by the charismatic and very energetic Jean-Philippe Archambaud. Established in 1840 by Jean Febvre, a barrel maker (cooper) who was from Montbard-a small industrial town on the river Brenne South of Chablis- it specialised exclusively in the production of sparkling wines made in the same way as champagne-now as we cannot call it "Methode Champenoise", it is now called "Traditional Method" or Cremant de Bourgogne. Today, Simonnet-Febvre, as it is now called, is the only winery in Chablis that produces Cremant de Bourgogne. The house of Simonnet Febvre specialise in three types of wine, primarily Chablis, plus Cremant de Bourgogne and wines from the Yonne vineyards.


New ownership brought new investment in the shape of a  brand new fully equipped modern winery at Chitry-le-Fort-an outlying region (canton) of Chablis, while still maintaining the original winery and tasting rooms in Chablis in the Avenue d'Oberwese-they have wonderful views from the front door, of the "Grand Cru" hill where all of the designated Grand Cru vineyards sit together.  Simonnet Febvre owns vineyards in Chablis, plus Premiere Cru "Mont de Mileu" and Chablis Grand Cru "Les Preuses". In addition it purchases grapes from a number of other top quality vineyards to make a range of wines reflecting the "Terroir"-(site,soil, climate, and location-perhaps "a sense of place")-and style of the region. As the wine quality continues to grow the house is being recognised not only throughout the world by a growing customer base, but also by the wine industry itself with accolades in The Wine Specatator for the Chablis Grand Cru Les Preuses-90 out of 100-keep an eye on these great value quality wines.
