Domaine Les Hautes Cances
Anne-Marie and Jean Marie Astart-both doctors by profession took over her families vineyards in 1992. Jean-Marie endeavoured to combine both his psychiatric practice and new found career of viticultuist and artisan wine maker, but finally gave up the medical practice in 2000 to concentrate exclusively on the wine. The estate benefits from exceptionally well established aged vines ranging from 25 to over 100 years old that produce small but very intense high quality fruit yields.
Situated in the centre of the village of Cairanne they established the new gravity feed winery and cellar in 2004.This has complemented their wines which have been produced since 1995 with dedication, and a style of viticulture that respects the environment-"viticulture raisonnée"-or sustainable agriculture-which in turn has produced wines that truly express the terroir and vines. Jean Marie has now become recognised as a top wine maker within the region and the estate is producing wines of real concentration, elegance, complexity and depth. The top cuvee-"Col-du-Debat"-has a very limited yield (no more than 20 hectolitres per hectare).
The resultant wines are complex, layered and full bodied with plenty of ripe fruit and tannin and definitely benefit from 3 to 5 years ageing before drinking-plus opening and decanting (all of the wines are bottled un-filtered to preserve all of the character and nuances obtained from the grapes)-the younger wines benefit from being opened in a decanter for at least 45 to 60 minutes.
